Rocco’s favourite Chocolate Chip Cookies

Rocco’s grandmother (Noonay as he likes to call her) makes the best chocolate chip cookies, so we thought we should share the love as not only are they absolutely delicious, but super easy and cheap to make…
  • ½ cup butter (you can use margarine but butter is best)
  • ¼ cup brown sugar and ¼ cup raw sugar
  • 1 tablespoon golden syrup
  • ½ teaspoon vanilla essence
  • 2 heaped tablespoons of plain cocoa powder
  • ¾ cup dark chocolate chips (use more or less to your taste)
  • 1 cup self-raising flour
  1. Heat oven to 160 degrees fan oven – 180 degrees non-fan
  2. Line a baking tray with baking paper
  3. Using a food processor/food mixer/hand mixer
  4. Cream butter and sugar then
  5. Add in the syrup and vanilla essence.
  6. Add in the cocoa powder and flour – mix well – this will form into a ball.   Then pull this ball apart so that the mixture is in a several bits and
  7. Last, add choc chips and mix in with a spoon or a table knife ensuring the choc bits don’t clump together and are spread out in the basic mix –  if a mixer is used, the whisks chop up the chocolate bits and the result is a bit different
  8. Roll into walnut sized balls, place on baking tray, slightly flatten with a fork and
  9. Bake for 20 mins
  10. When cooked, leave on baking tray for a couple of minutes as at this stage they are soft then transfer to wire tray to cool and become crisp
